Poached Snapper with Ginger & Soy Sauce March 31, 2026

Ingredients
- Snapper fillets 4 pieces
- Fresh ginger
- Garlic 3 cloves
- Scallions 4 stalks,
- Soy sauce 1/4 cup
- Rice vinegar 2 tablespoons
- Water 2 cups
- Sesame oil 1 teaspoon, toasted
- Sugar or honey 1 teaspoon
- Fresh cilantro small handful
- Optional chili flakes or sliced red chili
- Lime wedges for serving
Instructions
- In a wide pan, add ginger, garlic, and scallions. Pour in soy sauce, rice vinegar, and water. Add sugar or honey and bring to a gentle simmer for 3–4 minutes.
- Slide the snapper fillets into the pan in a single layer. Keep the liquid at a gentle simmer, not boiling.
- Poach the snapper for 6–8 minutes, depending on thickness, until opaque and flaky. Spoon broth over the top as it cooks if needed.
- Transfer snapper to serving plates. Drizzle with sesame oil, garnish with cilantro, scallions, and optional chili. Serve with lime wedges.
