Chilli Lime Fish May 20, 2025
Pan-seared chunks of white fish coated in a syrupy, spicy lime sauce. Very quick to make & loaded with big flavours! Check out the original recipe here.
Ingredients
Fish:
- 330g white fish fillets
- 1/4 tsp kosher salt
- 1/4 cup flour
- 2 tbsp canola oil
Sauce:
- 2 tsp sesame oil
- 2 garlic cloves, finely minced with a knife
- 2 tsp ginger, finely minced with a knife
- 1 tsp chilli flakes
- 2 tbsp sriracha
- 2 tsp light soy sauce or fish sauce
- 3 tbsp brown sugar
- 1/2 cup water
- 2 tbsp lime juice
Garnishes (optional):
- 2 tbsp coriander
- 1 tbsp large red chilli, finely sliced
- Lime wedges
Serve with:
- Rice of choice
- Steamed Asian greens tossed with Asian Sesame Dressing
Instructions
- First, sprinkle the fish with salt on both sides. Then, dust it lightly with rice flour, making sure it’s evenly coated.
- After that, shake off any extra flour so it doesn’t clump or burn in the pan. Next, heat a bit of oil in a non-stick skillet over medium-high heat. Once the oil is hot, carefully add the fish. Cook until golden brown on both sides — this should take about 2 to 3 minutes per side, depending on the thickness of the fillets.
- After cooking, transfer the fish to a plate and set it aside for now. Meanwhile, in the same pan, reduce the heat to medium and add a drizzle of sesame oil.
- Then, add the garlic, chilli, and ginger. Stir constantly and cook for about 20 seconds, just until the aromatics are golden and fragrant.
- Next, pour in the rest of your sauce ingredients, except for the lime juice. Let the mixture simmer for about 2 minutes, or until it thickens slightly. You’re looking for a glossy, syrupy consistency.
- Finally, stir in the lime juice. If the sauce becomes too thick at this point, simply add a splash of water to loosen it.
- Now, return the cooked fish to the pan. Gently turn it in the sauce, making sure each piece is fully coated. Take care not to break the fish apart while doing this.
- To serve, place the fish over hot steamed rice. Then, spoon extra sauce from the pan over the top.
- Finally, garnish with your favourite toppings — chopped spring onions, sesame seeds, or fresh herbs all work beautifully.
