Ingredients
- 500g white fish fillets, cut into chunks
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 small red chili, finely sliced (adjust to taste)
- 1 teaspoon ground cumin
- ½ teaspoon smoked paprika
- 4 cups fish or vegetable stock
- 1 large lemon (zest + juice)
- 1 cup diced tomatoes (canned or fresh)
- Salt and pepper to taste
- 1 tablespoon fresh parsley or cilantro, chopped
- Optional: red pepper flakes for extra heat
Instructions
- Start by heating olive oil in a large pot over medium heat. Add the chopped onion and cook for 3 to 4 minutes, until it becomes soft and translucent.
- Next, stir in the minced garlic and sliced chili, cooking for 1 to 2 minutes until fragrant.
- Sprinkle in the cumin and paprika, stirring well to coat the onion mixture. Let the spices toast for about 30 seconds to bring out their flavour.
- Pour in the fish or vegetable stock along with the diced tomatoes, then add the lemon zest. Stir everything together and bring to a gentle simmer.
- Carefully add the chunks of white fish. Let the mixture simmer—without boiling—for 6 to 8 minutes, or until the fish is opaque and flakes easily.
- Finally, stir in the lemon juice, then taste and adjust the seasoning with salt, pepper, and more chili if desired. Garnish with fresh parsley or cilantro just before serving.
