Honey and Soy Glazed Salmon December 1, 2025
Picture a whole side of salmon, glistening in a glossy honey-soy marinade, roasting gently in the oven until tender and flaky — the perfect centrepiece for a family dinner or a festive gathering. The sweet-savoury glaze brings out the salmon’s natural richness without overpowering it, while a sprinkling of fresh mint, zesty lemon and juicy pomegranate seeds adds brightness and colour. Ingredients
- 1.2 kg side of salmon
- 1 tbsp honey
- 2 tbsp soy sauce
- 1½ tsp crushed ginger
- 1 tbsp lemon juice
To serve (optional):
- 50 g pomegranate seeds
- A few fresh mint leaves
- Zest of 1 lemon
Instructions
- In a small jug, gently melt the honey (about 20 seconds in the microwave or over a warm water bath). Stir in the soy sauce, crushed ginger and lemon juice until combined.
- Remove any bones from the salmon, then gently brush the marinade all over. If you have time, marinate in the fridge for at least 30 minutes — or up to overnight for deeper flavour. Reserve a little extra glaze for later.
- Preheat your oven to 180 °C (fan bake). Line a baking tray with baking paper and place the salmon on it.
- Bake for 10 minutes, then take it out and brush over the reserved marinade. Return it to the oven and bake another 10 minutes — or until the salmon is cooked through and flakes easily.
- Transfer to a large serving platter. Garnish with pomegranate seeds, fresh mint leaves and lemon zest. Serve immediately with your choice of sides (roast veggies, potatoes, steamed greens, etc.).
